Junino Black Cake Recipe

The black cake, also called the “pé de moleque” cake, is one of the traditional recipes of Festas Juninas in the Northeast. Its main ingredients are cassava flour, black sugar cane, clove cashew nuts and fennel and here we teach you how to do it step by step. Ingredients for making Black Junino Cake:

 500 grams of cassava flour

 1 kg of chopped brown sugar

 600 milliliters of milk (2½ cups)

 350 milliliters of water

 250 milliliters of coconut milk

 1 cup of cashew nuts

 100 grams of butter or margarine

 clove to taste

 fennel to taste

How to make Black Junino Cake:

Put the brown sugar and water in a pan, place it on the fire and keep stirring until it dissolves completely.

In a bowl mix the dry ingredients: flour, cloves and fennel. Make a hole in the center and place the butter or margarine and the mixture of brown sugar and water there.

Mix very well this mass of black cake, adding the milk little by little. When homogeneous, place on a greased baking sheet and cover with whole or chopped nuts.
